Vegan Fajita Bowls

Ingredients

  • 4 tbsp Fajita seasoning divided throughout recipe
  • 2 cups Cooked Black beans drained and rinsed
  • 3 cups Cooked Rice
  • 3 cups Mushrooms sliced thinly
  • 1 Onion sliced thinly
  • 2 Bell peppers sliced thinly
  • 1 tbsp Garlic miinced
  • 2 tsp Oil divided throughout recipe
  • 1 cup Vegan yogurt (plain) optional for vegan cilantro yogurt dressing
  • 1.5 cups cilantro (fresh) optional for vegan cilantro yogurt dressing
  • 1 lime juiced, optional for vegan cilantro yogurt dressing
  • 1/2 tbsp Garlic 2-3 cloves, optional for vegan cilantro yogurt dressing
  • 1/2 tsp Salt optional for vegan cilantro yogurt dressing

Instructions

  • Heat 1 tsp of oil on a large pan on medium-high heat and cook onions and bell peppers for around 2-3 minutes.
  • Add garlic and saute for another couple of minutes.
  • Add 1 tbsp of fajita seasoning with a small splash of water and mix until well-combined. Set aside.
  • In the same pan, add another 1 tsp of oil and cook mushrooms for a few minutes until they become golden. Add 1 tbsp of fajita seasoning with a small splash of water and mix until well-combined. Set aside.
  • In the same pan, add black beans along with remaining (2 tbsp) of fajita seasoning and a splash of water. Mix and cook until beans are well coated in the seasoning.
  • In a blender, add all cilantro yogurt dressing ingredients and blend until smooth.
  • Assemble your fajita bowl by adding in 3/4 cup of rice, 1/2 cup black beans, 1/4 of the bell pepper and onion mixture, and 1/4 of the mushrooms into one serving bowl.
  • Top with 1/4 of the cilantro yogurt dressing and serve with lime wedges, salsa, vegan sour cream and/or avocado slices. Enjoy!
