- 1 Tortilla
- 1/4 cup Black beans rinsed and drained
- 1/4 Avocado
- 1/4 cup Corn optional - use whatever vegetables you'd like!
- 1 tsp Taco Seasoning or seasoning of choice
- 2 tbsp Salsa
Start making your black bean breakfast tacos by rinsing and draining your black beans.
Next, mash your avocado onto half of a laid-out tortilla. Squeeze lemon juice onto the mashed avocado (if you have lemons or lemon juice).
Top the mashed avocado with your black beans, vegetables (corn, onion, etc), and taco seasoning. Add whatever else you want: tomatoes, salsa, cilantro, etc. before folding in half.
Next, heat up some oil in a pan (feel free to skip the oil to keep it healthier) and lightly pan-fry the breakfast taco for a few minutes on each side to make it crispy. Flip with 2 spatulas if needed.
