This black bean breakfast tacos recipe takes about 10 mins to make! All you have to do add your black beans with vegetables of choice & seasoning to a tortilla, and warm up your breakfast taco on the pan! It's a quick & tasty breakfast!

Ingredients

  • 1 Tortilla
  • 1/4 cup Black beans rinsed and drained
  • 1/4 Avocado
  • 1/4 cup Corn optional - use whatever vegetables you'd like!
  • 1 tsp Taco Seasoning or seasoning of choice
  • 2 tbsp Salsa

Instructions

  • Start making your black bean breakfast tacos by rinsing and draining your black beans.
  • Next, mash your avocado onto half of a laid-out tortilla. Squeeze lemon juice onto the mashed avocado (if you have lemons or lemon juice). 
  • Top the mashed avocado with your black beans, vegetables (corn, onion, etc), and taco seasoning. Add whatever else you want: tomatoes, salsa, cilantro, etc. before folding in half. 
  • Next, heat up some oil in a pan (feel free to skip the oil to keep it healthier) and lightly pan-fry the breakfast taco for a few minutes on each side to make it crispy. Flip with 2 spatulas if needed.
