I follow a lot of different YouTubers – both vegan and non-vegan – because I like watching a variety of content and I find myself getting inspiration from both vegan and non-vegan channels as well. Recently I saw a video by a fellow YouTuber named Keemi, who does mukbang (eating show) videos on her channel. She isn’t vegan, but like I said, sometimes I like to get inspiration from non-vegan channels. She released a video where she made PIZZA TOAST. I thought it was brilliant and something I could easily veganize.
So, of course, I decided to make it – especially since it was such an easy recipe and something that ANYONE could make! You’ll have to watch the video above to see how it turned out.
I wanted to make a vegan version that was simple, easy, delicious and still affordable – so I decided to make my own vegan tofu cheese! I ALWAYS make this cheese – in fact, I’ve probably shown this on my channel at least 3 times before. But I always come back to this because a) it’s so easy to make, b) it’s affordable, c) it only requires 6 ingredients and d) it’s SO SO GOOD. This is the “tofu ricotta” cheese that I always use in lasagna but you could easily use this as a dip, spread or anything.
Tofu Cheese Spread Recipe (vegan & gluten-free)
(I halved my usual tofu ricotta recipe that I make for lasagna)
- 1/2 block extra firm tofu
- Juice of 1/2 lemon
- 1/4 tsp salt
- 1/2 tbsp basil
- 1/2 tbsp garlic powder
- 1/8 cup nutritional yeast (or however much you want – I didn’t measure, to be honest)
- Add all ingredients into a blender or food processor.
- Blend until smooth – you may have to mix it around and then blend again.
For how I made the actual pizza toast, you’ll have to watch the video above. It’s pretty self-explanatory though – once you have the ingredients, simply assemble onto a piece of bread!
This recipe is a lazy man’s dream! It takes 0 culinary skills. A monkey could make this. lol.
