I tried Low Carb VEGAN for a week (What I Ate & Final Thoughts)

As you know by my previous posts/videos, I tried doing a low carb vegan diet for one week. I aimed for a total of 25% of my calories from carbohydrates, which is very low compared to my usual 60% or more of my calories from carbs (click here to see the previous post)

I wanted to experiment and see how my body would feel on a low carb diet. I also wanted to see if I could make some delicious vegan low-carb recipes. If you want to hear my overall thoughts on my experiment and all the food I ate in a week as a low carb vegan (this video showcases days 5-7), then watch the video above!

Here are some of the foods I ate… maybe this might give you some ideas on what to eat on a low carb vegan diet – although I’m a noob at this so probably not! lol. 

Zucchini noodles with creamy avocado sauce, pan-fried tofu, Korean spinach side dish, cucumbers and edamame beans:


Tofu, vegetable and mushroom soup:


Tofu Shirataki Noodles with creamy avocado sauce, topped with mixed nuts (not a fan of the tofu shirataki noodles…)


Scrambled Tofu with Vegan Cheese and Avocado on the side:

Store-bought Vegan Burger Patty topped with Vegan Cheese, side of air-fried brussel sprouts and a spinach salad with avocado:
