FREE RECIPE! 10 Minute Peanut Soba Noodles

To give you guys a little taste, I'm giving away a FREE recipe from the Everyday Asian Recipes eBook. This is one of my favourites and it only takes 10 minutes (or 9...) to make!

I love everything about this dish. The nut butter creates the most amazingly creamy texture and flavour. Definitely a must try! 

Ingredients (2 servings): 

  • 2 servings of soba (buckwheat) noodles
  • Sauce:
    • 3 tbsp peanut butter (or almond butter) 
    • 2 tbsp soy sauce 
    • 1 tsp sesame oil 
    • 1 tbsp maple syrup or other sweetener 
    • juice of 1/2 lime 
    • 1/2 inch piece of ginger, grated (or use 1 tsp ginger powder) 
    • 1 tsp garlic powder
  • 1 bell pepper, cut into thin pieces
  • 1 handful cilantro, chopped (optional)
  • 1-2 medium carrots, julienned 
  • 2-3 tbsp crushed peanuts

Instructions:

  1. Cook noodles according to instructions.
  2. In a medium-sized bowl, mix together sauce ingredients until well-combined. If the peanut or almond butter is too thick, you might want to use a blender for this step or add in a splash of water. 
  3. When soba noodles are done, drain and rinse with cold water.
  4. Add noodles, vegetables and sauce into a mixing bowl and mix well.
  5. Top with crushed peanuts and serve!
